Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- 1 lemon, halved
- 1 onion, quartered
- 4-6 cloves of garlic, peeled
Instructions:
1. Preheat your oven to 425°F (220°C).
2. Remove the giblets from the chicken cavity, if any, and pat the chicken dry with paper towels.
3. In a small bowl, mix together the salt, black pepper, paprika, dried thyme, dried rosemary, and garlic powder.
4. Rub the olive oil all over the chicken, ensuring it is evenly coated. Sprinkle the spice mixture over the chicken, rubbing it into the skin.
5. Stuff the cavity of the chicken with the lemon halves, onion quarters, and garlic cloves.
6. Place the chicken on a roasting rack in a roasting pan, breast-side up.
7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh without touching the bone.
8. Once cooked, remove the chicken from the oven and let it rest for about 10-15 minutes before carving.
9. Carve the chicken and serve with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
